Bagels & Bialys: A Taste of Tradition & Community

Bagels and bialys hold a special place in Jewish life. From brises and baby namings to B’nai Mitzvahs and shivas, they seem to find their way onto every event menu. I often joke that American Jews can turn anything into an excuse for brunch—and honestly, we’ll eat brunch food at any time of day!

Growing up, my grandfather had strong opinions about bagels. He was firmly in the camp that anything too sweet was, in his words, “a donut, not a bagel.” For him, the classics reigned supreme: egg, plain, onion, sesame, poppyseed, and pumpernickel. The only “newfangled” bagel he accepted? The everything bagel—because it combined all the traditional flavors he loved.

Baking Through Quarantine

During the early days of COVID quarantine, I started making bagels and bialys at home. It was a strange, uncertain time, but having that hands-on connection to tradition brought comfort and a sense of normalcy. Fast forward a few years, and my pastry chefs, Kate and Mandy, started experimenting with bagel recipes in our kitchen. We introduced them at a few small events, and people loved them.

So last month, we decided to make it official. We figured out the logistics of running a dairy morning at the café, and Bagel Morning was born! We offered four flavors of bagels, three shmears, and, of course, lox. The response was incredible! Seeing so many happy faces enjoying fresh, homemade bagels was truly special.
